Named after the golden yellow flower, symbol for International Women’s Day (8th March), the Mimosa cake is a traditional Italian cake for celebrating women but also every important occasion.
Layers of deliciously soft and light Pan di Spagna sponge traditionally flavoured with a sweet Strega liquor syrup, filled with vanilla diplomat pastry cream, covered with small cubes of Pan di Spagna sponge to represent the yellow mimosa flower and garnished with a sprinkle of icing sugar and wafer flowers.
